By No Means was created behind the bar at Yellow, Sydney’s iconic botanical fine-dining restaurant housed inside the historic Yellow House — a legendary sanctuary for generations of Australian artists, musicians, and free-thinkers.

An actor and musician himself, By No Means founder, Tim, spent 12 years at Yellow. When the kitchen transitioned exclusively to tasting menus, Tim noticed a clear gap: guests choosing not to drink were missing out on equal, elevated pairings.

Tim set out to solve this by creating a non-alcoholic pairing concept based on mirroring fine wine — matching its visual weight, aromatic complexity, and structural integrity in the glass.

One year after By No Means launched, Tim and the business moved to Melbourne where Co-Founder Nik is also based. What began as small-batch infusions using pots on the stove in a restaurant kitchen is today produced within Victoria’s world-class community of craft drink makers.
